For this cheesecake, we start off making something similar to our soft-ripened cheese, Lois, but instead it is drained in bags and then whipped to create a completely different product known as Fromage Blanc, or Quark. This cheese, traditionally used in Germany and France, makes a cheesecake that is light and airy but somehow complex in flavor. We urge you to try this version if you are a cheesecake lover, you will not be disappointed!
